From 2010 to 2020, I was part of the Grill Royal universe—when it was the newly minted, hip hotspot of Berlin. I started in press and was soon asked to join the management team as the group expanded. I oversaw operations during the launch of Pauly Saal, a Michelin-starred restaurant in the historic former Jewish girls' school, paired with the internationally acclaimed Pauly Bar. I was also responsible for the renowned King Size nightclub during its time in Berlin’s nightlife scene.
I played a key role in launching Dóttir, the city’s first Nordic-inspired restaurant, in collaboration with chef Victoria Eliasdóttir. Set in a dilapidated building, Dóttir became an instant culinary destination, bringing the style and flavors of the North to Berlin. Around the same time, together with the now Managing Director and co-Owner Hubi Gradmann, we also opened Le Petit Royal, a “little sister” to Grill Royal, situated in Charlottenburg. With a focus on local ingredients and French cuisine, it quickly became a neighborhood favorite.
Across these projects, I was involved in creating restaurant concepts from scratch. Every venue was developed and designed within the group, from logos and printed materials to FF&E, OS&E, uniforms, and art collections—building complete dining experiences from the ground up, always focusing on the quality of the materials, ingredients and processes across all fields.
